There are moments that feel like the right ending to a beautiful story — and meeting Dario Cecchini in Panzano was exactly that. I have admired this legendary butcher for years, not only for his craft but for his passion, philosophy, and the spirit he brings to Italian tradition. To hand him my book, A Taste of Two Homes, where he is proudly featured, was a deeply symbolic moment — closing the chapter where so much began.
After more than 40 cities and over 100 restaurants across Italy, this encounter carried a special meaning. What started as curiosity has become one of the most valuable and emotional journeys of my life. I’ve met people who pour their hearts into what they do, places that tell stories beyond their walls, and chefs who reminded me that excellence always starts with love for the craft. Dario represents all of that perfectly.
Standing there in his world — surrounded by his laughter, energy, and the unmistakable aroma of his famous meats — I realised how much this journey has shaped me. Italy has given me lessons, friendships, inspiration, and countless moments I’ll never forget. It’s been a huge learning curve, one that challenged and rewarded me at every turn.
If this marks the end of my Italy tour, I can’t imagine a better finale. Meeting Dario Cecchini — a man who embodies the heart and soul of Italian gastronomy — felt like a natural conclusion to this chapter.
The story, however, never really ends. This is just the pause before the next adventure begins. Italy, thank you for everything!
