Known worldwide as the most famous butcher in Italy, Dario has built a reputation not just for his mastery of meat but for his passion, energy, and dedication to Tuscan tradition.
I traveled to Panzano to experience his famous lunch, a celebration of meat that stays true to the nose-to-tail philosophy. From the moment I stepped into Antica Macelleria Cecchini, it was clear that this was more than just a butcher shopโit was a place where food, culture, and storytelling come together. The atmosphere was vibrant, filled with warmth, laughter, and, of course, the unmistakable aroma of perfectly cooked Bistecca alla Fiorentina.
Beyond the incredible food, what made this experience truly special was Dario himself. We had an interview, which is now part of a new video, capturing not just his expertise but also his philosophy on life, food, and respect for the animal. His charisma and passion are contagious, and it didnโt take long for us to connect.
